Don't know about Jerry Lee doing it but apparently Fats did:

You Win Again (Hank Williams)
Hank Williams
78 - (M-G-M 11318)
Fats Domino 1962
Grateful Dead 1972
"Europe '72" (Warner Brothers 2668-2)

EDIT: In addition:
Ray Charles, Jerry Lee Lewis, Gerry and the Pacemakers. Del Shannon, THE BEE GEES, Mary-Chapin Carter also recorded "You Win Again". Though, the last two did so many years after E '72.

Fats ,and Rays versions are really good, and I should mention the utterly serious version by Johnny Cash on Sun ( and of course Hank's own !).
Here is a clip of Jerry Lee Lewis doing it . Note the upturn on "This heart of mINE"
, the same way Jerry does it, which make me think he might have had it in mind .

Oh and a version of Garcia with Elvis Costello

Lots of great versions of this great song .

If you want to pursue it:

Ray Charles: Modern Sounds on Country & Western Music (1962)

Fats Domino: Let the Four Winds Blow (1961)
